Ingredients
1/2 cup creamy peanut butter
1/4 cup coconut milk
2 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoon lime juice
1 tablespoon rice vinegar
1 teaspoon sriracha or chili garlic sauce
1 clove garlic, minced
1 teaspoon grated fresh ginger
2 tablespoons warm water (as needed)
Instructions
In a small saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, brown sugar, lime juice, rice vinegar, sriracha, garlic, and ginger.
Whisk continuously until smooth and heated through, about 3-5 minutes. Do not let it boil.
Remove from heat. If sauce is too thick, whisk in warm water 1 tablespoon at a time until desired consistency.
Taste and adjust seasoning with more lime juice, soy sauce, or sriracha as needed.
Let cool slightly before serving. Sauce will thicken as it cools.

For a smoother sauce, use natural peanut butter and stir well.
