Ingredients
1/2 cup roasted salted peanuts, finely chopped
1/4 cup powdered sugar
2 tablespoons creamy peanut butter
1 tablespoon honey
1 cup milk chocolate chips
1 tablespoon coconut oil
1/2 cup candy melts (white or colored)
Assorted food coloring (optional)
Instructions
In a small bowl, combine chopped peanuts, powdered sugar, peanut butter, and honey. Mix until a stiff dough forms.
Roll the mixture into 1/2-inch balls and place on a parchment-lined baking sheet. Freeze for 15 minutes.
In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
Using a fork or toothpick, dip each peanut ball into the melted chocolate, coating completely. Tap off excess and return to parchment. Refrigerate until set, about 10 minutes.
To make the candy shell, melt candy melts according to package directions. If using multiple colors, divide and tint with food coloring.
Using a small spoon, drizzle or paint the colored candy melts over the chocolate-coated candies. Alternatively, dip each candy into the colored coating for a solid shell.
Place back on parchment and let set completely at room temperature or in the refrigerator.
Store in an airtight container at room temperature for up to 2 weeks.
Tips
For a smoother center, pulse peanuts in a food processor until finely ground.
Use a toothpick to dip candies for easier coating.
