Ingredients
2 cups roasted unsalted peanuts
1/2 teaspoon salt
1-2 tablespoons peanut oil or other neutral oil (optional, for creamier texture)
Instructions
Preheat oven to 350°F (175°C). Spread peanuts on a baking sheet and roast for 8-10 minutes, stirring once, until fragrant and lightly golden. Let cool for 5 minutes.
Transfer warm peanuts to a food processor. Add salt. Process for 1 minute, then scrape down sides. Continue processing, scraping every minute, until smooth and creamy (about 5-7 minutes total). If needed, add oil 1 tablespoon at a time to reach desired consistency.
Taste and adjust salt if desired. Transfer to an airtight jar. Store at room temperature for up to 2 weeks or refrigerate for longer shelf life (stir before use if oil separates).
Tips
For crunchy peanut butter, reserve 1/4 cup of roasted peanuts, chop them, and stir in after processing.
If using salted peanuts, reduce or omit added salt.
Refrigeration will make the peanut butter firmer; let it sit at room temperature for 15 minutes before spreading.
