Ingredients
1 cup creamy peanut butter
1/2 cup honey
1 teaspoon vanilla extract
2 cups old-fashioned rolled oats
1 cup crispy rice cereal
1/2 cup mini chocolate chips
1/4 cup chopped peanuts (optional)
Instructions
Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
In a large microwave-safe bowl, combine peanut butter and honey. Microwave in 30-second intervals, stirring between, until smooth and well combined (about 1 minute total). Stir in vanilla extract.
Add oats, rice cereal, chocolate chips, and peanuts (if using). Stir until evenly coated.
Transfer mixture to the prepared pan. Press firmly and evenly into the pan using a spatula or your hands (lightly greased or use parchment paper).
Refrigerate for at least 1 hour until firm. Lift out using parchment overhang, then cut into 12 bars.
Store in an airtight container in the refrigerator for up to 1 week.
