Ingredients
1 cup creamy peanut butter
1/2 cup honey or maple syrup
1/4 cup coconut oil
2 cups crispy rice cereal
1 cup semisweet chocolate chips
1 tablespoon coconut oil (for chocolate layer)
Instructions
Line an 8x8-inch baking dish with parchment paper, leaving overhang on two sides for easy removal.
In a medium saucepan over low heat, combine peanut butter, honey, and 1/4 cup coconut oil. Stir until smooth and melted.
Remove from heat and fold in crispy rice cereal until well coated.
Press the mixture evenly into the prepared dish. Refrigerate for 15 minutes to set.
In a small microwave-safe bowl, combine chocolate chips and 1 tablespoon coconut oil. Microwave in 30-second intervals, stirring between, until melted and smooth.
Pour the melted chocolate over the peanut butter layer and spread evenly. Refrigerate for at least 1 hour until firm.
Lift the bars out using the parchment paper, cut into squares, and serve.
