  2. In a heavy-bottomed saucepan, combine sugar, corn syrup, and water. Stir to combine. Cook over medium heat, stirring occasionally, until the sugar dissolves and the mixture comes to a boil.
  3. Clip a candy thermometer to the side of the pan. Continue cooking without stirring until the temperature reaches 250°F (hard ball stage).
  4. Stir in the peanuts and butter. Continue cooking, stirring frequently, until the temperature reaches 300°F (hard crack stage).
  5. Remove from heat. Quickly stir in vanilla and baking soda. The mixture will foam up. Stir just until combined.
  6. Immediately pour the mixture onto the prepared baking sheet. Spread evenly with a spatula or tilt the sheet to thin the brittle. Let cool completely at room temperature (about 30 minutes).
  7. Once cooled, break into pieces. Store in an airtight container at room temperature.
