1 9-inch unbaked pie crust (homemade or store-bought)
6 cups sliced fresh peaches (about 6-7 medium peaches)
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
For the streusel:
3/4 cup all-purpose flour
1/2 cup packed brown sugar
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
6 tablespoons cold unsalted butter, cut into small pieces
Instructions
Preheat oven to 375°F (190°C). Place a baking sheet on the lower rack to catch drips.
In a large bowl, combine sliced peaches, 1/2 cup granulated sugar, 1/4 cup flour, lemon juice, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Toss gently to coat. Let stand for 10 minutes.
In a medium bowl, make the streusel: whisk together 3/4 cup flour, brown sugar, 1/4 cup granulated sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Cut in butter using a pastry blender or fingertips until mixture resembles coarse crumbs.
Place the pie crust in a 9-inch pie dish. Spoon the peach filling into the crust, mounding slightly in the center.
Sprinkle the streusel evenly over the peaches, covering completely.
Place pie on the preheated baking sheet. Bake for 45-50 minutes, until filling is bubbly and streusel is golden brown. If streusel browns too quickly, tent with foil during last 15 minutes.
Cool on a wire rack for at least 2 hours before serving to allow filling to set.
