Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups frozen peas (or fresh, shelled)
- 4 cups vegetable broth
- 1/2 cup fresh mint leaves, chopped
- Salt and pepper to taste
- 1/4 cup heavy cream (optional, for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened, about 5 minutes.
- Add peas and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes until peas are tender.
- Remove from heat. Stir in mint leaves. Use an immersion blender to puree until smooth. Alternatively, blend in batches in a blender.
- Season with salt and pepper to taste. Serve hot, drizzled with cream if desired.
