Ingredients
1 tbsp olive oil
1 small onion, chopped
1 clove garlic, minced
4 cups frozen peas
3 cups vegetable broth
1/2 cup fresh mint leaves, packed
1/2 cup heavy cream (optional)
Salt and black pepper to taste
Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
Add peas and vegetable broth. Bring to a boil, then reduce heat and simmer for 5 minutes until peas are tender.
Remove from heat. Stir in fresh mint leaves.
Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer to a blender in batches and blend until smooth.
Stir in heavy cream if using. Season with salt and pepper to taste. Reheat gently if needed.
Ladle into bowls and garnish with additional mint leaves or a swirl of cream if desired.
