Ingredients
1 French baguette, sliced into 1/2-inch rounds
3 tablespoons olive oil, divided
1 1/2 cups frozen peas, thawed
1/4 cup fresh mint leaves, plus more for garnish
1 clove garlic, minced
2 tablespoons lemon juice
1/4 cup grated Parmesan cheese

Instructions
Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush with 1 tablespoon olive oil. Bake for 8-10 minutes until golden and crisp.
In a food processor, combine peas, mint, garlic, lemon juice, Parmesan, remaining 2 tablespoons olive oil, salt, and pepper. Pulse until smooth but still slightly chunky.
