  2. Peel, core, and chop apples. Place in a saucepan with 2 tablespoons water. Cook over medium heat, covered, until soft, about 15 minutes. Mash into a smooth puree.
  3. Transfer apple puree to a large bowl. Stir in sugar and lemon juice. Let cool completely.
  4. Beat egg whites until stiff peaks form. Gently fold into apple mixture until no white streaks remain.
  5. Spread mixture evenly onto prepared baking sheet to about 1/2-inch thickness.
  6. Bake for 3 hours, or until the surface is dry and the pastila feels firm but slightly tacky. Turn off oven and let cool inside with door ajar.
  7. Dust a cutting board with powdered sugar. Carefully peel pastila off parchment. Cut into rectangles or squares. Dust with more powdered sugar.
  8. Store in an airtight container at room temperature for up to 2 weeks.
