Ingredients
200g spaghetti
3 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1/4 teaspoon red pepper flakes (optional)
Salt, to taste
1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley
Instructions
Bring a large pot of salted water to a boil. Add spaghetti and cook according to package directions until al dente.
While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using) and cook until garlic is golden, about 1 minute.
Reserve 1/2 cup pasta water, then drain the spaghetti. Add the drained pasta to the skillet with the garlic oil. Toss to coat, adding a splash of pasta water if needed to loosen.
Remove from heat. Stir in Parmesan cheese and parsley. Season with salt to taste. Serve immediately.
Tips
For extra flavor, add a squeeze of lemon juice before serving.
