Ingredients
12 oz (340 g) dried spaghetti or other long pasta
4 tbsp (56 g) unsalted butter, cubed
1 cup (100 g) freshly grated Parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
1/4 cup reserved pasta water
Instructions
Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente.
Reserve 1/4 cup pasta water before draining. Drain pasta well.
Return the hot pasta to the pot. Add butter, Parmesan, salt, and pepper. Toss vigorously until butter melts and cheese coats the pasta, adding pasta water a little at a time to create a creamy sauce.
Serve immediately, passing extra Parmesan at the table.
