  2. Bring to a boil without stirring. Attach a candy thermometer and cook until mixture reaches 310°F (hard crack stage).
  3. Remove from heat and stir in rose water and vinegar. Let cool for 2 minutes.
  4. Pour the hot syrup onto a greased marble slab or silicone mat. Let cool until pliable but not hard, about 5 minutes.
  5. Using a bench scraper or metal spatula, fold the edges toward the center repeatedly until the mass becomes opaque and stretchy.
  6. Begin pulling and stretching the mass with both hands, folding it over itself repeatedly. Continue until it becomes thin, shiny threads. Work quickly.
  7. As threads form, gather them into a fluffy nest. If the mass hardens, microwave briefly (10 seconds) to soften.
  8. Sprinkle with cardamom if desired. Serve immediately or store in an airtight container.
