4 slices bacon, chopped

1 pound parsnips, peeled and diced into 1/2-inch cubes
2 medium apples (such as Granny Smith), peeled, cored, and diced into 1/2-inch cubes

Instructions
In a large skillet, cook bacon over medium heat until crispy, about 5 minutes. Transfer bacon to a paper towel-lined plate, leaving drippings in skillet.
Add olive oil and onion to the skillet; cook until softened, about 3 minutes. Add garlic and cook 1 minute more.
