- 1.5 lbs (about 6 medium) waxy potatoes, such as Yukon Gold or red potatoes
- 1 tsp salt
- 3 tbsp unsalted butter
- 1/4 cup finely chopped fresh parsley
- Freshly ground black pepper, to taste
Instructions
- Scrub potatoes and place them in a large pot. Cover with cold water by 1 inch. Add 1 tsp salt.
- Bring to a boil over high heat, then reduce to a simmer. Cook until potatoes are tender when pierced with a fork, about 15-20 minutes.
