Ingredients
4 boneless, skinless chicken breasts (about 6 oz each)
1/2 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with cooking spray.
Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
Set up a breading station: one shallow dish with flour, one with beaten eggs, and one with a mixture of panko, Parmesan, garlic powder, oregano, salt, and pepper.
Coat each chicken breast in flour, shaking off excess. Dip in egg, then press into breadcrumb mixture, ensuring even coating.
Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and cook for 2-3 minutes per side until golden brown.
Transfer skillet to the oven and bake for 15-20 minutes, or until chicken is cooked through (internal temperature reaches 165°F).
Remove from oven and let rest for 5 minutes before serving.
Tips
For extra crispiness, spray the breaded chicken with cooking spray before baking.
Serve with lemon wedges and a side salad or roasted vegetables.
Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven to maintain crispiness.
