- 4 large bell peppers (any color)

- 1 cup cooked rice
- 1 can (400 g) diced tomatoes, drained
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1/2 cup grated Gruyère or Emmental cheese
- 1/2 cup beef or chicken broth
Instructions
- Preheat oven to 180°C (350°F). Cut tops off peppers and remove seeds and membranes. Blanch peppers in boiling water for 3 minutes; drain.
- Heat olive oil in a skillet over medium heat. Sauté onion until soft, about 5 minutes. Add garlic and cook 1 minute.
- Add ground meat and cook until browned. Stir in rice, diced tomatoes, paprika, thyme, salt, and pepper. Cook 2 minutes.
- Stuff each pepper with the meat mixture. Place peppers upright in a baking dish. Sprinkle cheese on top.
- Pour broth into the dish around the peppers. Bake uncovered for 35-40 minutes, until peppers are tender and cheese is golden. Serve hot.
