  1. Season chicken thighs with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken skin-side down and cook until golden brown, about 5 minutes per side. Remove chicken and set aside.
  2. Reduce heat to medium. Add onion to the skillet and cook until softened, about 4 minutes. Add garlic and cook for 1 minute. Stir in sweet paprika and smoked paprika, cooking for 30 seconds until fragrant.
  3. Pour in chicken broth, scraping up any browned bits from the bottom of the pan. Return chicken to the skillet, skin-side up. Bring to a simmer, then cover and cook over low heat for 25 minutes, until chicken is cooked through.
  4. In a small bowl, whisk together sour cream and flour until smooth. Remove chicken from the skillet and keep warm. Stir the sour cream mixture into the sauce. Simmer for 2-3 minutes until thickened. Adjust seasoning with salt and pepper.
  5. Return chicken to the skillet, spoon sauce over the top. Garnish with fresh parsley and serve.
