Ingredients
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 tablespoon white sugar
1/4 teaspoon salt
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
1 teaspoon vanilla extract
Instructions
In a large bowl, whisk together flour, baking powder, sugar, and salt.
Make a well in the center and pour in milk, egg, melted butter, and vanilla. Mix until smooth.
For pancakes: Heat a griddle or non-stick pan over medium heat. Pour 1/4 cup batter per pancake. Cook until bubbles form on surface, then flip and cook until golden.
For waffles: Preheat waffle iron. Pour batter onto hot iron (amount varies by iron). Cook until steaming stops and waffle is golden brown.
Serve immediately with butter, syrup, or toppings of choice.
Tips
Do not overmix the batter; lumps are okay.
For extra fluffy pancakes, let batter rest 5 minutes before cooking.
