Ingredients
4 bone-in pork chops, about 1 inch thick
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
2 tablespoons unsalted butter
2 large apples, peeled, cored, and diced
1/4 cup apple cider
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon apple cider vinegar
Instructions
Season pork chops on both sides with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add pork chops and cook until golden brown, about 4 minutes per side. Transfer to a plate and tent with foil.
Reduce heat to medium. Add butter to the skillet, then add apples, apple cider, brown sugar, cinnamon, and nutmeg. Cook, stirring occasionally, until apples are tender, about 5-7 minutes.
Stir in apple cider vinegar. Return pork chops to the skillet, spooning compote over them. Cook for 2 more minutes to warm through.
Serve pork chops with apple compote spooned on top.

For a thicker compote, cook an additional 2-3 minutes until liquid reduces.
