Ingredients
1 1/2 cups all-purpose flour
1 teaspoon instant yeast
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 cup warm water (110°F)
2 tablespoons olive oil, divided
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Optional toppings: pepperoni, sliced mushrooms, bell peppers, etc.
Instructions
In a large bowl, combine flour, yeast, salt, and sugar. Add warm water and 1 tablespoon olive oil; stir until a shaggy dough forms. Knead on a lightly floured surface for 5-7 minutes until smooth and elastic.
Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour until doubled.
Heat a 10-inch cast-iron or oven-safe skillet over medium heat. Add remaining 1 tablespoon olive oil.
Press dough into the skillet, stretching to edges. Cook for 2-3 minutes until bottom is golden.
Spread pizza sauce over dough, leaving a 1/2-inch border. Sprinkle mozzarella and Parmesan, then add desired toppings.
Cover skillet with a lid or foil and cook over medium-low heat for 10-12 minutes until cheese melts and bottom is crispy.
If desired, broil on high for 1-2 minutes to brown the top. Let cool for 5 minutes before slicing.
Tips
For a thicker crust, let dough rise in the skillet for 20 minutes before topping.
Use a non-stick skillet if you don't have cast iron.
Leftover pizza can be reheated in a dry skillet over medium heat.
