Ingredients
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 2 celery stalks, finely chopped
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 pint shucked fresh oysters with their liquor
- 1 tablespoon chopped fresh parsley
Instructions
- In a large saucepan, melt butter over medium heat. Add onion and celery; cook until softened, about 5 minutes.
- Sprinkle flour over vegetables and stir; cook for 1 minute.
- Gradually whisk in milk and cream. Add salt, pepper, and paprika. Bring to a gentle simmer, stirring often.
- Add oysters with their liquor. Cook for 3-4 minutes, until edges of oysters curl. Do not boil.
- Remove from heat. Stir in parsley. Serve immediately.
Tips
- For a richer stew, use half-and-half instead of milk.
- Oyster stew is traditionally served with oyster crackers.
