Ingredients
- 1 pint shucked oysters, drained
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup buttermilk
- 1 cup panko breadcrumbs
- Vegetable oil, for frying
- 4 brioche burger buns, split and toasted
- 1/2 cup remoulade sauce
- 1 cup shredded lettuce
- 4 slices tomato
- 4 slices red onion
Instructions
- In a shallow bowl, whisk together flour, paprika, cayenne, garlic powder, salt, and pepper.
- Place buttermilk in another bowl and panko in a third bowl.
- Dredge each oyster in the flour mixture, then dip in buttermilk, then coat with panko, pressing gently to adhere.
- Heat 1 inch of vegetable oil in a large skillet to 350°F (175°C).
- Fry oysters in batches for 2-3 minutes per side until golden and crispy. Drain on paper towels.
- Spread remoulade on the cut sides of each bun.
- Place a handful of lettuce on the bottom bun, then top with a tomato slice, a red onion slice, and 4-5 fried oysters.
- Close with the top bun and serve immediately.
Tips
- For best results, use fresh shucked oysters and pat them dry before breading.
- Keep fried oysters warm in a 200°F oven while frying remaining batches.
- Substitute tartar sauce if remoulade is unavailable.
