Ingredients
12 oz (340g) dried pasta (e.g., penne or fusilli)
3 tbsp butter
2 cloves garlic, minced
1/4 cup chopped fresh parsley
2 tbsp chopped fresh basil
1 tbsp chopped fresh oregano
1/2 cup grated Parmesan cheese
1/4 cup grated Pecorino Romano cheese
Salt and black pepper to taste
Instructions
Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
While pasta cooks, melt butter in a large skillet over medium heat. Add garlic and cook for 1 minute until fragrant.
Remove skillet from heat. Add the hot drained pasta, parsley, basil, oregano, Parmesan, and Pecorino. Toss well, adding reserved pasta water a little at a time until the cheese melts and coats the pasta (you may not need all the water).
Season with salt and pepper to taste. Serve immediately.
Tips
For extra richness, add a splash of heavy cream along with the cheese.
Substitute herbs based on availability; a mix of mint and chives also works well.
Store leftovers in an airtight container in the fridge for up to 2 days. Reheat with a splash of water or milk.
