Ingredients
4 large russet potatoes (about 2 lbs)
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease.
Scrub potatoes and cut each into 8 wedges (lengthwise). Pat dry with a clean towel.
In a large bowl, whisk together olive oil, garlic powder, paprika, oregano, salt, and pepper. Add potato wedges and toss to coat evenly.
Arrange wedges in a single layer on the prepared baking sheet, skin-side down.
Roast for 20 minutes, then flip wedges and continue roasting for another 15-20 minutes until golden brown and crispy.
Sprinkle with fresh parsley if desired and serve hot.
