Ingredients
1 whole chicken (about 4 pounds)
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 tablespoon fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 lemon, halved
Instructions
Preheat oven to 425°F (220°C).
Pat the chicken dry with paper towels. In a small bowl, mix olive oil, garlic, rosemary, thyme, parsley, salt, and pepper.
Rub the herb mixture all over the chicken, including under the skin. Place lemon halves inside the cavity.
Truss the chicken legs with kitchen twine and tuck wing tips under the body.
Place chicken breast-side up on a rack in a roasting pan. Roast for 50-60 minutes, until internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Let rest for 10 minutes before carving. Serve with pan juices.

For extra crispy skin, let the chicken air-dry in the refrigerator uncovered for a few hours before roasting.
