1 pound bologna, unsliced (or thickly sliced)
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1/4 teaspoon onion powder
Instructions
Preheat oven to 375°F (190°C). Line a baking dish with foil or parchment paper.
If using a whole bologna log, score the surface in a diamond pattern about 1/4 inch deep. If using thick slices, arrange them in a single layer in the dish.
In a small bowl, whisk together ketchup, brown sugar, vinegar, Worcestershire sauce, dry mustard, and onion powder until smooth.
Brush half of the glaze over the bologna, making sure to get into the scored cuts.
Roast for 15 minutes. Remove from oven, brush with remaining glaze, and roast for another 15 minutes until the glaze is bubbly and caramelized.
Let rest for 5 minutes before slicing. Serve warm.
