  2. In a medium bowl, whisk together flour, baking powder, salt, and pepper. In a separate small bowl, beat the egg and milk together. Pour the wet ingredients into the dry and whisk until smooth (batter will be thick).
  3. Pour oil into a deep pot or Dutch oven to a depth of 2 inches. Heat over medium-high heat until oil reaches 375°F (190°C) on a deep-fry thermometer.
  4. Dip each onion ring into the batter, letting excess drip off. Carefully place a few rings into the hot oil without crowding. Fry for 2-3 minutes, turning once, until golden brown.
  5. Transfer fried rings to a paper towel-lined plate to drain. Repeat with remaining rings. Serve immediately.
