Ingredients
8 oz (about 2 cups) elbow macaroni
2 cups whole milk
2 cups water
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon mustard powder
1 1/2 cups shredded sharp cheddar cheese
1/2 cup shredded mozzarella cheese
2 tablespoons unsalted butter
Instructions
In a large pot or Dutch oven, combine macaroni, milk, water, salt, pepper, garlic powder, and mustard powder. Stir to combine.
Bring to a boil over medium-high heat, stirring occasionally to prevent sticking.
Reduce heat to medium-low and simmer, stirring frequently, until pasta is tender and most of the liquid is absorbed, about 8-10 minutes.
Remove from heat. Add shredded cheddar, mozzarella, and butter. Stir until cheeses are melted and sauce is creamy.
Let sit for 2 minutes to thicken slightly, then serve immediately.
Tips
For a richer flavor, use whole milk and sharp cheddar.
Add a pinch of cayenne or paprika for a spicy kick.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of milk.
