1 tablespoon unsalted butter
1/4 cup grated Gruyère or Emmental cheese

Crack the eggs into a bowl, add salt, pepper, and water if using. Whisk vigorously until the whites and yolks are fully combined and slightly frothy.
Heat a non-stick 8-inch skillet over medium-high heat. Add the butter and swirl until melted and foamy but not browned.
Pour the eggs into the skillet. Let them set for a few seconds, then use a rubber spatula to stir the eggs in a circular motion, pushing cooked edges toward the center and tilting the pan to let uncooked egg flow to the edges.
