Ingredients
1 cup old-fashioned rolled oats
1 cup buttermilk
1 large egg
1/2 cup packed brown sugar
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup raisins
Instructions
Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
In a small bowl, combine oats and buttermilk; let stand for 10 minutes to soften.
In a large bowl, whisk together egg, brown sugar, oil, and vanilla until smooth. Stir in oat mixture.
In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Add to wet ingredients and stir just until combined. Fold in raisins.
Divide batter evenly among muffin cups, filling each about 2/3 full.
Bake for 18-20 minutes, until a toothpick inserted into center comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.
