Ingredients
1 cup (2 sticks) unsalted butter, softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups old-fashioned rolled oats
1 cup raisins
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, beat butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes.
Add eggs one at a time, beating well after each addition. Beat in vanilla extract.
In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
Gradually add dry ingredients to wet mixture, mixing on low speed until just combined.
Stir in oats and raisins with a spatula until evenly distributed.
Drop rounded tablespoons of dough (about 1.5 tablespoons each) onto prepared baking sheets, spacing 2 inches apart.
Bake for 10-12 minutes, until edges are golden brown and centers are still soft. Let cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Tips
For chewier cookies, chill the dough for 30 minutes before baking.
Store in an airtight container at room temperature for up to 1 week.
Can substitute raisins with chocolate chips or dried cranberries.
