Ingredients
2 cups rolled oats
1 cup whole wheat flour
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1/3 cup maple syrup
1 large egg
1 teaspoon vanilla extract
3/4 cup raisins
Instructions
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
In a large bowl, whisk together oats, flour, brown sugar, cinnamon, baking soda, and salt.
In a separate bowl, whisk together melted butter, maple syrup, egg, and vanilla until smooth.
Pour wet ingredients into dry ingredients and stir until just combined. Fold in raisins.
Transfer mixture to prepared pan and press evenly into an even layer using a spatula or your hands.
Bake for 20-25 minutes, until edges are golden brown and center is set. Cool in pan on a wire rack for 10 minutes, then lift out using parchment overhang and cut into 12 bars. Cool completely before serving.
