Ingredients
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 cup unsalted butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
3 cups old-fashioned oats
1 cup semisweet chocolate chips
1/2 cup heavy cream
1/2 cup unsalted butter, cubed
1 cup powdered sugar
1 tsp vanilla extract
Instructions
Preheat oven to 350°F. Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
In a large bowl, beat 1 cup butter, brown sugar, and granulated sugar until creamy. Beat in eggs and 1 tsp vanilla.
Gradually beat in flour mixture. Stir in oats. Drop by rounded tablespoons 2 inches apart onto prepared sheets.
Bake 10-12 minutes until golden. Cool on sheets 5 minutes, then transfer to wire racks to cool completely.
For fudge filling: In a small saucepan, heat chocolate chips, cream, and 1/2 cup butter over low heat, stirring until smooth. Remove from heat; stir in powdered sugar and 1 tsp vanilla until smooth. Let cool to room temperature until spreadable (about 30 minutes).
Spread about 1 tablespoon filling on flat side of half the cookies; top with remaining cookies.
Tips
Store sandwiches in an airtight container at room temperature for up to 3 days.
For a firmer filling, refrigerate sandwiches for 30 minutes before serving.
