Ingredients
1 cup rolled oats
1 cup buttermilk
1 large egg
2 tablespoons melted butter
2 tablespoons brown sugar
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chocolate chips
Instructions
In a medium bowl, combine rolled oats and buttermilk. Let sit for 5 minutes to soften.
Add egg, melted butter, brown sugar, and vanilla to the oat mixture. Stir until combined.
In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
Pour dry ingredients into wet ingredients and stir until just combined. Fold in chocolate chips.
Heat a griddle or non-stick pan over medium heat. Lightly grease with butter or oil.
Pour 1/4 cup batter per pancake onto the griddle. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook until golden brown, another 1-2 minutes.
Repeat with remaining batter. Serve warm with maple syrup, if desired.
