- 2 cups rolled oats
- 1 cup old-fashioned oats (or quick oats)
- 1/2 cup packed brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup dried cranberries or raisins
- 1/2 cup chopped nuts (walnuts or almonds)
Instructions
- Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
- In a large bowl, combine rolled oats, brown sugar, salt, and cinnamon. Stir in melted butter, honey, and vanilla until well mixed.
- Fold in dried cranberries and nuts. Press mixture firmly into prepared pan.
- Bake for 20-25 minutes until edges are golden brown. Cool completely in pan on a wire rack.
- Use parchment overhang to lift out of pan. Cut into 12 bars.
