Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together 1 cup peanut butter, 1/2 cup butter, granulated sugar, and brown sugar until light and fluffy.
Beat in egg and 1 teaspoon vanilla extract.
In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined.
