Ingredients
8 oz (225g) dark chocolate (70% cocoa), chopped
1/2 cup (120ml) heavy cream
2 tbsp unsalted butter, softened
1 tsp vanilla extract
20 whole almonds or hazelnuts, toasted
1/4 cup (30g) cocoa powder, for rolling
Instructions
Place chopped chocolate in a heatproof bowl. Heat cream in a small saucepan until just simmering. Pour over chocolate, let sit 1 minute, then stir until smooth.
Add butter and vanilla, stir until combined. Let ganache cool at room temperature for 30 minutes, then refrigerate until firm, about 1 hour.
Using a melon baller or teaspoon, scoop a small amount of ganache, press a nut into the center, and shape into a ball. Repeat with remaining ganache and nuts.
Roll each truffle in cocoa powder to coat. Refrigerate until firm, about 15 minutes.
Store in an airtight container in the refrigerator for up to 2 weeks.

For best flavor, use high-quality chocolate.
Toast nuts in a dry pan over medium heat for 3-5 minutes until fragrant.
If ganache is too soft to shape, refrigerate longer.
