Ingredients
1/2 cup warm water
1/4 cup granulated sugar
3 tablespoons fish sauce
2 tablespoons fresh lime juice
1 tablespoon rice vinegar
2 cloves garlic, minced
1-2 Thai bird chilies, thinly sliced (adjust to taste)
1 tablespoon finely shredded carrot (optional)
Instructions
In a small bowl, combine warm water and sugar. Stir until the sugar is completely dissolved.
Add fish sauce, lime juice, and rice vinegar. Stir well to combine.
Stir in minced garlic and sliced chilies. Add shredded carrot if using.
Taste and adjust seasoning, adding more sugar for sweetness, lime juice for sourness, or chilies for heat.
Let the sauce sit for at least 10 minutes before serving to allow flavors to meld.
Tips
Store in an airtight container in the refrigerator for up to 2 weeks.
For a milder sauce, remove seeds from chilies before slicing.
Serve as a dipping sauce for spring rolls, grilled pork, or over rice noodle bowls.
