Instructions
- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
- Cook egg noodles according to package directions until al dente; drain and set aside.
- In a large skillet over medium heat, melt 2 tbsp butter. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
- Stir in flour and cook for 1 minute. Gradually whisk in milk, then bring to a simmer until thickened, about 2-3 minutes.
- Remove from heat and stir in sour cream, cottage cheese, salt, pepper, paprika, and 1 1/2 cups of shredded cheddar until smooth.
- Combine the sauce with the cooked noodles and transfer to the prepared baking dish. Top with remaining 1/2 cup cheddar.
- In a small bowl, mix panko with melted butter and sprinkle over the casserole.
- Bake for 25-30 minutes, until bubbly and golden on top. Let rest 5 minutes before serving.
