Ingredients
200g digestive biscuits
80g unsalted butter, melted
500g cream cheese, softened
100g powdered sugar
2 tablespoons instant coffee granules
2 tablespoons hot water
300ml heavy cream
1 teaspoon vanilla extract
Cocoa powder or chocolate shavings for garnish (optional)
Instructions
Crush the digestive biscuits into fine crumbs. Mix with melted butter until combined. Press firmly into the base of an 8-inch springform pan. Refrigerate while preparing the filling.
Dissolve instant coffee in hot water and let cool.
In a large bowl, beat cream cheese and powdered sugar until smooth. Add cooled coffee and vanilla extract, mix well.
In a separate bowl, whip heavy cream until stiff peaks form. Gently fold into the cream cheese mixture until no streaks remain.
Pour the filling over the crust and spread evenly. Smooth the top with a spatula.
Refrigerate for at least 6 hours or overnight until set. Garnish with cocoa powder or chocolate shavings before serving.
