Ingredients
1/2 cup unsalted butter
1/2 cup milk
2 cups granulated sugar
1/4 cup unsweetened cocoa powder
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups quick-cooking oats
Instructions
Line a baking sheet with parchment paper or wax paper.
In a medium saucepan over medium heat, combine butter, milk, sugar, and cocoa powder. Stir frequently and bring to a rolling boil. Boil for 1 minute, then remove from heat.
Stir in peanut butter and vanilla extract until smooth and well combined.
Add oats and stir until all oats are evenly coated.
Drop by rounded tablespoonfuls onto the prepared baking sheet. Let cool at room temperature for 5 minutes, then refrigerate for at least 30 minutes until set.
Store in an airtight container in the refrigerator.
Tips
Use quick-cooking oats for the best texture; old-fashioned oats may result in a drier cookie.
For a variation, add 1/2 cup shredded coconut or chopped nuts with the oats.
Cookies can be stored in the refrigerator for up to 1 week or frozen for up to 3 months.
