Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
16 oz cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy cream
2 tablespoons powdered sugar
Instructions
In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing filling.
In a large bowl, beat cream cheese, 1/2 cup sugar, and vanilla extract until smooth.
In a separate bowl, whip heavy cream and powdered sugar until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until well combined.
Pour filling over crust and smooth the top. Refrigerate for at least 6 hours or overnight until set.
Run a knife around the edge of the pan before releasing the springform. Slice and serve.
