Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 tablespoons granulated sugar
16 oz cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy cream
1/4 cup powdered sugar
1 cup fresh berries or fruit preserves for topping (optional)
Instructions
In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press firmly into the bottom of a 9x9-inch baking dish lined with parchment paper. Refrigerate while preparing filling.
In a large bowl, beat cream cheese, 1/2 cup sugar, and vanilla extract until smooth.
In a separate bowl, whip heavy cream and powdered sugar until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until well combined.
Spread the filling evenly over the crust. Smooth the top with a spatula.
Refrigerate for at least 4 hours, or until firm. Top with berries or fruit preserves before serving if desired. Cut into bars and serve.
