A classic French composed salad with tuna, hard-boiled eggs, olives, and fresh vegetables, perfect for a light lunch or dinner.

Ingredients
4 small new potatoes, halved
100g green beans, trimmed
2 large eggs
1 can (150g) tuna in olive oil, drained
100g mixed salad greens
1/2 cup cherry tomatoes, halved
1/4 cup Niçoise olives
2 tablespoons capers, rinsed
1/2 small red onion, thinly sliced
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
Salt and freshly ground black pepper to taste
Instructions
Place potatoes in a saucepan, cover with salted water, and bring to a boil. Cook until tender, about 10 minutes. Add green beans for the last 3 minutes. Drain and rinse under cold water.
Place eggs in a small saucepan, cover with water, and bring to a boil. Cook for 8 minutes for hard-boiled. Transfer to ice water, peel, and quarter.
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the vinaigrette.
Arrange salad greens on a large platter or individual plates. Top with potatoes, green beans, tuna, egg quarters, tomatoes, olives, capers, and red onion.
Drizzle with vinaigrette and serve immediately.
Tips
For a vegetarian version, omit tuna and add extra beans or artichoke hearts.
The salad can be prepared ahead and assembled just before serving.
