Ingredients
4 slices rye bread
6 oz sliced pastrami
6 oz sliced corned beef
4 slices Swiss cheese
1/2 cup coleslaw (store-bought or homemade)
2 tbsp Russian dressing
2 tbsp butter, softened
Instructions
Preheat a skillet or griddle over medium heat.
Butter one side of each bread slice.
Place two slices of bread, buttered side down, on a clean surface. Layer each with half the pastrami, half the corned beef, and 2 slices of Swiss cheese.
Spread 1 tablespoon Russian dressing on the unbuttered side of the remaining bread slices, then top each sandwich with a slice, buttered side up.
Place sandwiches in the hot skillet and cook until golden brown and cheese is melted, about 2-3 minutes per side.
Remove from skillet, open each sandwich, and stuff with half the coleslaw. Press gently, cut in half, and serve immediately.
Tips
For extra flavor, toast the rye bread lightly before assembling.
Substitute sauerkraut for coleslaw if you prefer a Reuben-style sandwich.
