- 2 cups shredded Mexican blend cheese
- 1 cup cooked and seasoned ground beef (or black beans for vegetarian)
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup canned corn kernels, drained
- 1/4 cup sliced pickled jalapeños
- 1/2 cup pico de gallo or salsa
- 1/2 cup sour cream
- 1/2 cup guacamole
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Spread tortilla chips in a single layer on the baking sheet. Sprinkle half of the cheese evenly over chips.
- Distribute ground beef, black beans, corn, and jalapeños over the chips. Top with remaining cheese.
- Bake for 8-10 minutes, until cheese is melted and bubbly. Remove from oven.
- Dollop pico de gallo, sour cream, and guacamole over the hot nachos. Sprinkle with cilantro.
- Serve immediately with lime wedges on the side.
Tips
- For extra crunch, use restaurant-style thick tortilla chips.
- Customize with toppings like diced tomatoes, sliced olives, or shredded lettuce.
- If making ahead, bake without fresh toppings, then add them just before serving.
