Ingredients
1 (13 oz) bag tortilla chips
2 cups shredded Monterey Jack cheese
1/2 cup pickled jalapeño slices
1/2 cup sour cream
1/2 cup salsa
2 ripe avocados
1 lime, juiced
1/4 cup finely chopped red onion
1/4 cup chopped fresh cilantro
1 small tomato, seeded and diced
1/2 teaspoon salt
Instructions
Preheat oven to 400°F (200°C). Spread tortilla chips in an even layer on a large baking sheet. Sprinkle shredded cheese evenly over chips. Top with jalapeño slices.
Bake for 5-7 minutes until cheese is melted and bubbly.
While nachos bake, make guacamole: Cut avocados in half, remove pits, and scoop flesh into a bowl. Mash with a fork to desired consistency.
Stir in lime juice, red onion, cilantro, tomato, and salt. Mix well.
Remove nachos from oven and transfer to a serving platter. Dollop sour cream and salsa over nachos. Serve with guacamole on the side.
Tips
For extra heat, add sliced serrano peppers to the guacamole.
To keep guacamole from browning, press plastic wrap directly onto the surface before refrigerating.
