Ingredients
- 1 (13 oz) bag tortilla chips
- 2 cups shredded Mexican blend cheese
- 1/2 cup sliced black olives
- 1/2 cup pickled jalapeño slices
- 1/2 cup sour cream
- 1/2 cup pico de gallo or salsa
- 3 ripe avocados
- 1/4 cup finely chopped red onion
- 1 jalapeño, seeded and minced
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- Salt to taste
Instructions
- Preheat oven to 400°F. Spread tortilla chips in a single layer on a large baking sheet.
- Sprinkle shredded cheese evenly over chips, then top with black olives and pickled jalapeños.
- Bake for 8-10 minutes until cheese is melted and bubbly.
- Meanwhile, make guacamole: Halve avocados, remove pits, and scoop flesh into a bowl. Mash with a fork to desired consistency.
- Stir in red onion, minced jalapeño, cilantro, lime juice, and salt. Mix well.
- Remove nachos from oven and transfer to a serving platter. Dollop with guacamole and sour cream, then top with pico de gallo. Serve immediately.
Tips
- For extra heat, add more jalapeños or a dash of hot sauce.
- If serving later, keep guacamole covered with plastic wrap touching the surface to prevent browning.
- Substitute Greek yogurt for sour cream for a lighter option.
